Whether you’re on a date, out with friends or meeting business associates for a working lunch, you’ll find that Waka provides a sophisticated level of dining without taking itself too seriously.
Head Chef Carlo Valentino brings together art and food in a way that showcases a fusion of his native Peruvian tastes and Japanese flavours in a truly unique taste experience. Whether you choose to dine from the set menu, harvest menu, date night menu or a la carte menu, you’re in for some big, bold flavours.
Kick off with one of six ceviches, or the ceviche platter, all of which come with the option to add crispy calamari or extra spice, and perhaps a salad. After that, we’d recommend ordering as many small plates as you can manage! Choose from the tiraditos section, which contains the likes of Japanese scallops and wagyu ribeye, the Nikkei section, where you’ll find expertly-crafted maki and nigari, or the tapas section which might yield ‘wakamole’ (nachos with guacamole), empanadas or crispy calamari.
If you’re in the mood for meat, be sure to check out the josper grill section, which includes spare ribs, lamb chops and roasted baby chicken. For anyone avoiding meat, there’s truffled quinoa risotto, Peruvian asparagus and corn salad. Sweet endings can be found in the form of desserts including chocolate mousse, salted caramel cheesecake, tres leches cake and a ‘fake tomato’ (which is actually strawberry mousses with chocolate ‘soil’), to name a few. Also unmissable is the Escobar Brunch on Fridays and Nikkei Night on Mondays.
